INGREDIENTS
◾️10 hot dogs (all beef)
◾️3 tsp active dry yeast
◾️⅓ cup (+1 tsp) white sugar
◾️4 cups all-purpose flour
◾️1 tsp table salt
◾️1 tbsp veggie oil
◾️¼ cup baking soda
◾️kosher salt, coarse salt (for topping)
◾️2 tbsp butter (for brushing
spray oil)
INSTRUCTIONS
Prepare the Dough:
◾️In a small bowl, dissolve yeast and 1 teaspoon sugar in 3/4 cup warm water. Let stand until creamy, about 10 minutes.
◾️In a large bowl, or the bowl of a stand mixer, combine the flour, ⅓ cup sugar, and salt. Once mixed, add the yeast mixture and oil. Mix and knead the mixture until the dough forms.
◾️Knead the dough until smooth, about 8-10 minutes. This is easiest in a stand mixer fitted with a dough hook.
◾️Once the dough is smooth, remove it from the bowl and give the bowl a quick spray of oil. Place the dough back in the bowl and cover with plastic wrap or a damp towel.
◾️Allow the dough to rise in a warm place until doubled in size, about 90 minutes.
Prepare the Hot Dogs:
◾️Once dough has risen, preheat the oven to 230°c.
◾️Grease 2 baking sheets.
◾️Turn the dough out onto a clean, smooth surface and divide into 10 equal pieces.
◾️Using the palms of your hands to roll the dough against the counter, roll each piece into a rope about 18” long.
◾️Remove the hot dogs from their packaging and pat them dry with paper towels to remove excess moisture.
◾️Gently wind a dough piece around each dog.
◾️In a medium bowl dissolve the baking soda in 2 cups of warm water.
◾️Dip pretzel hot dogs in the bath, let excess water drip off, then place it on the baking sheet.
◾️Bake in the preheated oven until browned, about 8-12 minutes.
(Don’t pull them when they’re golden or the inside may be undercooked).
◾️Melt the butter (you can do that in the microwave), then brush each dog with a little bit and top with the coarse salt.
◾️Serve immediately.
